Coconut-Ginger-Pineapple SooFoo™

A terrific side dish that adds a Hawaiian flavor. Sure to bring a smile.

15 min prep | 60 min total

Serves 4

Ingredients:
3 3/4 cups of water
1 8-ounce can of pineapple bits in juice
2 cups of SooFoo™
1 tablespoon minced fresh ginger
1 tablespoon chopped cilantro
2 tablespoons light coconut milk
1/4 teaspoon salt

Instructions:

  1. Drain pineapple and save juice
  2. Combine juice, water and SooFoo™ and cook on stovetop for 45-50 minutes
  3. While SooFoo™ is cooling, heat a large non-stick skillet
  4. Coat with cooking spray and add ginger and pineapple bits
  5. Saute for 4 minutes until caramelized
  6. Add coconut milk and cilantro and heat for additional 1-2 minutes
  7. Drain SooFoo™ mix (if necessary)
  8. Combine SooFoo™ with ginger, pineapple mix, cilantro, coconut milk
  9. Salt to taste and serve
