
Coconut-Ginger-Pineapple SooFoo™
A terrific side dish that adds a Hawaiian flavor. Sure to bring a smile.

Serves 4
Ingredients:
3 3/4 cups of water
1 8-ounce can of pineapple bits in juice
2 cups of SooFoo™
1 tablespoon minced fresh ginger
1 tablespoon chopped cilantro
2 tablespoons light coconut milk
1/4 teaspoon salt
Instructions:
- Drain pineapple and save juice
- Combine juice, water and SooFoo™ and cook on stovetop for 45-50 minutes
- While SooFoo™ is cooling, heat a large non-stick skillet
- Coat with cooking spray and add ginger and pineapple bits
- Saute for 4 minutes until caramelized
- Add coconut milk and cilantro and heat for additional 1-2 minutes
- Drain SooFoo™ mix (if necessary)
- Combine SooFoo™ with ginger, pineapple mix, cilantro, coconut milk
- Salt to taste and serve
