
Mango SooFoo® Pilaf with Curried Chicken

Ingredients:
1 1/2 cups of firmly packed fresh basil leaves
1/4 cup olive oil
1/3 cup grated Asiago or Parmesan cheese
1/3 cup toasted pecan pieces
4 large garlic cloves chopped (approx. 2 Tablespoons)
1/2 teaspoon finely grated lemon zest
2 cups cooked SooFoo as directed (optional: use 1/2 water and 1/2 white wine)
Salt and Pepper to taste
Instructions:
1. Put all ingredients except SooFoo in a food processor or blender and process until smooth
2. In a large bowl fluff the SooFoo with a fork and stir Pesto into it
3. Optional: add 1 tsp. of butter
